Domaine Les Champs de lAbbaye\’s 2022 Bourgogne Cte Chalonnaise \’Les Amourettes\’ is a biodynamic Chardonnay from the Aluze plateau near Mercurey. Crafted from young, high-density vines planted on white marl soils, this wine offers a vibrant expression of its terroir.

Tasting Notes:
The wine presents a bright, medium-bodied profile with aromas of ripe yellow apple and pear, complemented by juicy tropical fruit and lemon confit on the palate. Despite its lithe 12.5% ABV, it delivers a round mouthfeel with a medium to full body, making it a versatile pairing for dishes like blanquette de veau, monkfish l\’oseille, or roasted pork belly.

Winemaking:
Following organic and biodynamic practices, the grapes undergo pneumatic pressing, spontaneous fermentation with natural yeasts, and aging in oak barrels (15% new) for 12 months. The wine is bottled without fining or filtration, preserving its purity and expression of the Aluze terroir.

This wine pairs well with a variety of dishes, including shellfish, pasta, rich fish like salmon or tuna, and mild, soft cheeses.
